I just spent two incredible weeks in Dubai. Now, the first thing that might come to mind is how expensive Dubai can be, so my boyfriend and I were definitely looking to reduce costs here and there. 

During the workweek, instead of eating out, we ordered meal prep - delivered straight to the front door. It was a really good price for the weekly packages. And every time I selected my weekly meals, I always added the Peanut Butter Protein Truffles. 

After leaving, I was looking for a way to recreate these “healthy” truffles. I loved having them for a dessert; it was the perfect amount to quench my sweet tooth. And this recipe is the result of that search.

So, if you love dessert just as much as I do, but are looking to make it a little healthier, especially when it comes to your mental health, keep reading!

 

The Yummiest Peanut Butter Protein Truffles

This recipe makes about 12 truffles. I like to double it up, and freeze some (saves you from making this recipe twice!). And if you’ve got a roommate who loves these just as much as you do, it also ensures you have plenty to go around.

How These Peanut Butter Protein Truffles Contribute to Better Mental Well-Being

Life is meant to be enjoyed. And this means having a sweet treat once and a while. Even better if it’s got some nutritional value, like these protein truffles. So, how do these yummy bites contribute to better mental wellness? Below, we take a closer look.

 

They Have a Good Amount of Protein 

Each ball contains six grams of protein. Considering you’re lucky if a chocolate chip cookie contains one gram of protein, this is pretty good in the realm of desserts. But what’s protein got to do with mental health?

Well, protein is the building blocks of the body, meaning they also help produce hormones and neurotransmitters that are foundational for feeling good

Protein also fills you up, meaning you won’t be running for another snack or meal for at least a few hours. Plus, these protein truffles contain two grams of fiber each, which also contributes to greater satiation.

 

Fiber Also Improves Gut Health

…which, in turn, can enhance your brain health and mood. Maybe you’ve heard of the gut-brain axis—a bidirectional highway that connects your brain and gut. In fact, if you’ve ever had the stomach flu or food poisoning and felt kind of depressed afterwards (and inevitably, during it), this connection is why!

If you’re gut is doing less-than-ideal, well, you’re likely not going to feel great either. This is largely because the gut produces a surprising 95% of your total serotonin. And serotonin helps regulate your mood, appetite, sleep, and even libido! 

So, a lot of the time, feeling good and improving mental well-being can start with your gut—AKA eating well. And yup, these protein truffles can totally be part of that movement.

These Protein Truffles Provide a Dose of Healthy Fats

Healthy fats play a vital role in brain function, mood regulation, and overall mental well-being. Your brain is made up of nearly 60% fat, and it relies on a steady supply of dietary fats to build and maintain cell membranes, support nerve signaling, and produce key hormones and neurotransmitters like serotonin and dopamine. 

Without enough fat—especially the right kinds—your nervous system can’t function optimally, and you may experience issues like brain fog, low mood, or fatigue. So, how do these truffles play a role here?

These bites offer a smart balance of healthy fats from two sources: coconut oil and peanut butter. While coconut oil is higher in saturated fats, it contains medium-chain triglycerides (MCTs), which are easily used by the body and may support mental energy. 

On the other hand, peanut butter provides mainly unsaturated fats, which have been linked to improved heart and brain health. Together, they create a nourishing, satisfying snack—just be mindful of portions, especially with coconut oil, as moderation is key! But, don’t panic, one or two a day isn’t going to take you overboard (as long as the rest of your diet accounts for it).

Peanut Butter Protein Truffles

Ingredients:
  • ½ cup of non-dairy, (unsweetened) vanilla yogurt
  • ¼ cup of smooth, natural peanut butter
  • ½ cup of vegan vanilla protein powder
  • ¼ cup of fine almond flour
  • Pinch of salt
  • 2 tablespoons of diced, roasted, salted peanuts (divided)
  • ½ cup of vegan chocolate chips
  • 2 teaspoons of refined coconut oil
Instructions:
  1. Add the yogurt and peanut butter into a mixing bowl, stirring until they are well combined. 
  2. Then, add the protein powder, almond flour, and salt to the yogurt + peanut butter mix. Mix until it has a dough-like texture. 
  3. Add 1 ½ tablespoons of peanuts to the mix and stir again. (Alternatively, dark chocolate chips are also really good!).
  4. Dampen your hands, then roll the mixture into 12 balls. Place them on a plate, then in the freezer for five to seven minutes.
  5. In a microwave-safe bowl, add the chocolate chips and coconut oil. Microwave them for 30-45 second increments, stirring in between, until they are fully melted. 
  6. Line a plate or pan with wax paper. 
  7. Dip the balls in the chocolate and coconut oil mixture (until fully coated), then add them to the wax paper.
  8. Sprinkle peanuts (or coconut flakes or salt) on the top of each ball, then place in the fridge to solidify. They’ll last about a week or 10 days in the fridge, as long as they are stored in an airtight container.
